October Lunch: Porcini Beef Stew
The featured lunch for October is Stewed Beef Cheek with Chestnut and Porcini Sauce.
Laid on a creamy bed of mashed potatoes are slices of beef cheek, a traditional stew meat that softens to perfection when braised, garnished with chestnuts and surrounded by fragrant porcini mushroom sauce. It combines some of Japan’s favorite autumn ingredients – potatoes, chestnuts, and mushrooms – for a delicious treat.
Porcini mushrooms, known as the King of Mushrooms, form a close relationship with the soil of the deciduous forests in which they grow. This makes them rare finds in the wild, and gives them their unique nutty flavor so prized by chefs around the world for soups, stews, and sauces.
As befits a king, the chef at Takimoto Inn paired the porcini with Madera wine to create a deep and sweet flavor to match the beef. The steady smoothness of the mashed potatoes and chestnuts provide further balance for a more than satisfying lunch experience.
In October, our featured pasta is Tagolini in Maitake Cream Sauce topped with generous amounts of bright green mizuna (potherb mustard) and prosciutto. Another fragrant mushroom adored for its flavor, maitake make a mouth-watering sauce.
